Seafood Ramen pop up at Chipperfield Kantine

For the first time, Food Technique Berlin will present his most beloved seafood Ramen as a carefully curated small menu at the Chipperfield Kantine in Mitte. The event takes place in collaboration with Frischgefischt, a supplier from Hamburg specializing in sustainably sourced fish and seafood. In January, colder waters and low temperatures ensure particularly high quality and pristine flavor in fish and seafood, allowing the exceptional products from Frischgefischt to truly stand out.

Food Technique Berlin and Frischgefischt have been working together since 2023, collaborating on several pop-ups in Berlin and Hamburg. This menu brings together the most popular dishes from those pop-ups, refined and presented as a cohesive seafood Ramen experience. The focus is on light Ramen bowls built around fish and seafood, accompanied by thoughtfully composed side dishes that can be enjoyed on their own or as a complementary addition to the Ramen.

The 3-course menu for €39,00 per person includes:

  • Brioche with autumn truffels

  • Cabbage with Shiso and citrus

  • Karashibi-style Miso Ramen with Chili and Sichuan pepper (Kikanbo inspired) - served mild or spicy - with mushroom soup and chashew milk, thick, chewy noodles topped with roasted oyster mushrooms, bean sprouts, sweet onions and garlic chives

  • Dessert (to be announced soon)

Additional toppings are available for Ramen (to be ordered on location):

  • Marinated egg (€3,00)

  • Pork belly (€7,00)

  • Chicken thigh (€7,00)

As is customary in Japan, chilled water is available as a beverage inclusive. Beer, wine, sake and non-alcoholic alternatives can be ordered for an additional charge.

The majority of seats will be sold via reservation in advance (make reservation on booking widget on right bottom corner). Each seating has a time limit of 75 minutes (with an additional buffer of 15 minutes). The rest of the seats will be available for walk-ins the day of the event.

Inside the Chipperfield Kantine guests will be able to enjoy their bowl in a typical ramen shop atmosphere. This means the guest room will be lively, cozy, and noisy with an open kitchen to watch the chefs preparing the bowls and sides. We warmly welcome families with children of all ages, and there is space for strollers as well. We are also happy to accommodate dogs, provided they can rest comfortably under the table.

The menu contains celeriac, gluten, nuts (cashew, hazelnut, peanuts and sesame), wheat and soy. Unfortunately it is not possible to make any further individual adjustments. No pickups or takeaway possible.

Stephan Hentschel, celebrated for pioneering vegetarian haute cuisine, led Berlin's Cookies Cream to become the first Michelin-starred vegetarian venue in Germany. His culinary ethos centers on unique vegetable culinary techniques, setting new standards for plant-based dining. Hentschel's influence extends beyond the kitchen, notably through his Michelin star and three Tocques from Gault Millau. His involvement in major cultural events showcases his ability to blend gastronomy with cultural experiences, earning him a distinguished reputation in the culinary community.
